BREAKFAST BOMBS AND PIZZA SNACKS



We're going to a Christening today at 3pm which meant eating at teatime. What we needed was a hearty start to the day and, maybe a snack for later. 

BREAKFAST BOMBS AND PIZZA SNACKS were the obvious choice, especially as this is a bank holiday. 
WE HAVE ALL THE TIME IN THE WORLD!!!


We came across this idea at Lake Tahoe in the States. Put in what ever you fancy. Crack in an egg, it will cook while it;s in the oven. But,today, were not having an egg, we're having .....





Mediterranean Filling Today.



First off;  make your favourite bread dough - based on 2 1/4 cups flour (I like 2/3 brown, the rest, white, 120ml water, 1t yeast, 1t sugar, knead for 5 mins, stand for about an hour/til it's twice the size). 



In the meantime, go back to bed with a tray of tea and a good man. or what ever floats your tea bag,

Prepare  a chilli salsa using these things. Suggest you don't add salt as the stuff in jars and some of the  next ingredients are very salty.





 Dice the veges.

Not everything though! These bits wont be used today.


Use olive oil to fry veges


When brownish and translucent, add 1t Pesto and 1t olive pate.


Add tinned toms AND THEN chillis ( don't fry - choking hazard - funny, but not funny. Try it, you'll see what I mean). Cook and stir, then leave on turned off hob as you do the rest.


Dice this stuff chunky-ish . The packet stuff is Soya  Rosso - well yummy, also use sun dried toms, olives. mushes, red peppers. You wont need much of anything.


By now the dough should have quadrupled in size ( timing is everything) , so cut into 4 parts.


Roll each 1/4 into a ball = 4 balls. Put 2 balls to one side for later. Split each of the other 2 in half and roll into 4 tea plate circles (roughly).


Put 2 discs of dough onto a greased baking tray and add diced cold stuff. Make a hole in the centre of your diced pile: use your finger, go on you know you want to.


Spoon salsa into the hole you've made (selling it well, aren't I)?  and then, all over the diced stuff. It doesn't matter if it runs out, onto the tray a bit.


Add diced cheeses; for this - Feta and Haloumi.


Put the tops on. Be as fancy as you're moved to. Me, I went for the more formal, neat, circle; pasty stylee edges ( phna phna - thanks Spoons).

Make breather holes in the top. If you're allowed to, use a sharp knife!


Wack 'em in the oven on hot (180c, or more if you have a cool oven) for 10 mins and then, at 20 degrees less, grate a bit of cheese on top (so they don't look so dusty)  and bake at this lower temp for 5 or 10 mins. Brown bottom and hollow sounding = done. Serve.


Eat them NOW.

SO WHAT ABOUT THE OTHER 2 DOUGH ROLLS SIMPLY SITTING ON YOUR WORK SURFACE...AND THAT LEFT OVER SALSA????

The other 2 dough rolls are for a snack. Use your hand to stretch and  beat them into two thickish 5 inch circles.



Top with 1T salsa on each and grated cheddar = just a bit. Sprinkle dried basil  and some pepper on top. 


Put these rather small PIZZAS in the oven with the BOMBS and take out after about 10 - 15 mins and keep for later.
