Breakfast Pockets 8.8.10

Make a bread dough that you like and leave it to rise. Once it's fully risen, roll out 4 discs, about tea plate size. 2 need to be slightly bigger than the other 2.

Gather your ingredients, what ever you like to eat for breakfast. Here I've used cooked potato and I've made a tomato salsa. Baked beans are also fantastic in this.

Put the 2 smaller discs onto a baking tray.

Put everything on the 2 smaller discs.

Put on the salsa.

Create a small dip in each one to act as a reservoir.

Crack an egg into each centre and put on the lids.

Make a small hole in the top of each POCKET.

Bake at 180C for 20mins.

What a great start to a day.
