This is a yummy recipe. There is a bit of SIMPLE prep, but after that, it pretty much cooks itself.
THIS VEGETABLE HAS MANY NAMES - HERE IS A LIST!
AKA: Yellow Sunburst Squash, Pattypan Squash or Scallop Squash. Pattypan Squash. Pattypan Squash. I think when the Tibetan Buddhists were reviewing candidates for a primary mantra, “Pattypan Squash” must have been on the short list before they decided upon Om Mani Padme Hum. Just try to not feel benevolent and contented saying Pattypan Squash. You can’t, can you?!

THE RECIPE:
Roasted Veges with a Tomato Sauce on Pasta.
*ROASTING THE VEGES*
Dice and bruise (crush under the edge of the knife) 3 or 4 CLOVES of GARLIC
Melt about a teaspoonful of butter, the microwave is good for this, and sir in the garlic. Leave to one side.
Heat the oven to 200C, or 230C on my rubbish oven.
I've allowed 2 SQUASHES each, a few tiny ONIONS each and a SWEET PEPPER between us. Use any SUMMER VEGES you have to hand.
Arrange veges on a baking tray
Brush over your GARLIC BUTTER then sprinkle DRIED BASIL over.
Whack em in the oven and prep .....
*THE SAUCE*
Dice the other veges:
Half carrot
1 large onion
1 stick celery
2 cloves of garlic.
Fry the veges in a little oil of your choice.
As they're frying, gather the wet ingredients.
Pour in the TINNED TOMATOES
Add 2 big teaspoonfuls of PESTO
to the pan.
and 2 heaped dessert spoonfuls of TOMATO PUREE
Put on the lid and cook gently.
Stir from time to time to prevent burning.
PUT YOUR FEET UP FOR 10 OR 20 MINUTES - do keep half an eye on your food in case it burns!
When the veges look a little tanned, like this -
Gather what cheese you have, we're a bit low, but have 3 small pieces. They'll do nicely, a tad of each.
Plonk cheese on top of the squashes. The splodgey on is mozzarella.
Shake some chilli flakes on top - if you think you're hard enough : )
Put it back into the oven, having turned the baking tray around first.
The veges can stay in until you've cooked the -
*PASTA*
Put on water to boil
Put in the pasta, any kind you fancy, and cook according to the instructions, usually about 8 minutes.
While everything's finishing, *LAY THE TABLE*
LOOKS OK!
It may seem a strange addition to a pasta meal,
but it works. especially with a bit of cheese grated on top.
