Spicey Veggie Shepaherds Pie Wednesday 20.10.10



I found these delicious BLUE LEGS (Wood Blewits) growing in a customers. Compost heap today.


Cut off the stuff at the bottom of the stipe (stem) and and compost it. Give the rest a gentle scrub and dice into chunks.


Dice onion and garlic. Fry gently until transparent,


then add the fungi and


continue to fry until the onion is golden.
Add a t of each spice and a dash of oil to it so that the spices are well soaked. Fry them for a few seconds and then, with the pan still over the heat, stir them through the onion and mushroom mixture. Once everything is well mixed pour in the beans and half a can of water.


Choose a nice, juicy chilli pepper.

Put it on the sacrificial board


and chop it, seeds and all, into small pieces.


Add the chilli to the pan of food and Simmer for about 10 minutes, stirring to prevent burning.
Pour in the tin of Chick Peas with the water from the can. Stir and cook until the mixture has reduced.


While you're waiting, mash the vegetables with some butter.


Put the bean mix into a casserole dish


and carefully spoon the mashed veges over the top. Rough the surface with a fork.

Grate cheese over and sprinkle over dried Basil.


Cook in woodburner or under the grill until crisp and golden on top.
