Some people react to this fungi. Check you're OK with a small piece..... before you really tuck in.
They have a really good flavour and are great eaten fresh, but well worth drying if, like me, you've got a glut of them.
Chop em up, stalks and all.
Drop them into boiling water for a few seconds and then fish out and drain well.
Throw away the water.
Spread them out on an ungreased baking sheet.
and dry them GENTLY.
Cool them and store in an air tight jar.
